Asparagus is a difficult vegetable to cook well. Steaming it can make it too soft, whilst grilling it can result in stalks which are burnt on the outside and still raw in the middle. Roasting asparagus in the oven is an easy method of cooking which produces consistently good results every time.
How To Make Easy Oven-Roasted Asparagus
Ingredients (serves 2)
• 125g fine asparagus
• 1 tablespoon olive oil
• Ground black pepper
1. Preheat oven to 200◦C.
2. Snap the dry ends off the asparagus and place on a baking tray.
3. Add the olive oil, a generous pinch of salt and pepper, and toss to thoroughly coat the asparagus.
4. Space the spears evenly apart on the tray and cook to 10-15 minutes, turning halfway through, until the asparagus is tender.
Asparagus can vary in its thickness so increase the cooking time if you have thicker spears. You can also add a squeeze of fresh lemon juice to the asparagus after cooking.
